Inky black-fruit core of blackberry and cassis with black truffle, cedar, espresso and vanillin; full-bodied, super-polished tannins and a long, savory finish.

Western: roast lamb, ribeye steak, venison, mushroom risotto. Asian: Peking duck, char siu, Korean BBQ (bulgogi), soy-braised beef or braised short ribs with hoisin/soy.

Production Method
Hand-harvested, low yields; wooden-vat fermentation with pneumatic pigeage; malolactic in barrel; ~18 months ageing in 100% new oak; bottled unfiltered.
