Tasting Note

Black cherry, plum, cocoa, tobacco and menthol notes; ripe, medium–full body with firm, silky tannins, lively acidity and a fresh, lingering finish (black fruit, tobacco, cedar).

Western: roast lamb, ribeye or braised short ribs, mushroom risotto, aged cheeses (Comté, Manchego). Asian: Peking duck, char siu, Korean BBQ (galbi), beef teriyaki, miso-glazed aubergine, hot-pot with meaty broths.


Production Method

Hand-harvested; cold maceration and temperature-controlled fermentation in stainless steel; aged ~16 months in 60% new oak (rest in 1-yr barrels and tanks).

Château La Dominique, a 20-ha Grand Cru Classé estate on the northern St-Émilion plateau near Cheval Blanc; long-standing estate owned by the Fayat family with Michel Rolland as consultant.
