Tasting Note
Pale peach color; expressive aromas of peach, apricot, citrus with saline and aniseed hints. Medium-bodied, round and slightly fleshy with a fresh, slightly bitter finish.
Food Pairing
Western: grilled red mullet, seafood paella, monkfish skewers, pork loin with lemon and Niçoise-style vegetables. Asian: sashimi/sushi, Thai prawn salad, warm octopus with capers, grilled miso aubergine, Korean-style grilled pork.

Parcel selection; hand and mechanical harvest; direct and partial whole-cluster pressing; low-temperature fermentation; aged on fine lees in stainless steel. Estate converted to biodynamics (Demeter).
