Tasting Note
Pale peach color; expressive stone fruits (peach, apricot), red-berry and mineral notes with iodine/anise nuances. Balanced, full-bodied palate with fresh acidity and a persistent, saline finish.

Food Pairing
Western: grilled red mullet, monkfish skewers with pine-nut sauce, filet mignon with apricots, Niçoise-style pork loin. Asian: warm octopus salad with capers, Thai seafood, sashimi/sushi, grilled squid/seafood skewers.

Production Method
Parcel selection and hand-harvested fruit; whole-cluster or direct pressing, indigenous yeasts, low-temperature fermentation and partial ageing on fine lees in stainless-steel; biodynamic viticulture (Demeter).
