Tasting Note
Golden, honeyed color; rich nose of toast, citrus and white fruit. Full-bodied yet fresh, slightly buttery with bright acidity, saline minerality and a long, persistent finish.
Food Pairing
Western: Provençal bouillabaisse, pan-fried scallops, crab & pomelo salad, Bresse chicken with morels. Asian: miso-glazed black cod, Thai seafood curry, steamed sea bass with ginger and soy.

Parcel-by-parcel selection; hand-harvested and sorted; whole-bunch pressing; indigenous yeasts; low-temperature fermentation partly in oak with bâtonnage; aged 8–10 months in new and one‑wine barrels; Demeter biodynamic.
