Tasting Note
Pale salmon colour; grapefruit, lime, strawberry, morello cherry and raspberry. Light, fresh and rounded on the palate with zesty acidity and a tangy finish.

Food Pairing
Western: chilled zucchini & basil soup, Provencal tian with goat cheese, scallops, sea bream carpaccio, red-berry pavlova. Asian: sushi/sashimi, Vietnamese fresh spring rolls, cold sesame/noodle salads, light Thai or Vietnamese seafood dishes.

Production Method
Made from organic Rosé d'une Nuit cuvée. Mechanical harvest, low-temp fermentation and lees ageing in stainless steel; alcohol removed by vacuum distillation (evaporation at 35–40°C) to preserve aromatics.
