Tasting Note
Pale salmon-pink with aromas of grapefruit, lime, strawberry, raspberry and morello cherry. Delicate mousse, fresh acidity and light-bodied, fruity palate with a clean, tangy finish.

Food Pairing
Western: chilled zucchini and basil velouté, Provençal tian with goat cheese, red berry pavlova, grilled salmon, light salads. Asian: sushi and sashimi, ceviche, Thai seafood salad, cold rice noodle salads, Vietnamese spring rolls.

Production Method
Low-temperature pressing and stainless-steel fermentation; aged on fine lees. Alcohol removed by controlled vacuum distillation/evaporation (max ~35–40°C) to preserve aromatics.
