Tasting Note
Pale-gold wine with toasted hazelnut, flint, apple and rose aromas. Balanced, voluminous palate with fine grain, bitter-orange lift, pronounced minerality and a long, saline finish.

Western: oysters, seafood platters, grilled or roasted fish, lemon-roasted chicken, fresh goat cheese. Asian: sushi/sashimi, tempura, miso-glazed fish, steamed shellfish, light Thai or Vietnamese seafood dishes.
Production Method
Cold settling before fermentation; alcoholic and malolactic fermentations in stainless steel; ~12 months ageing on fine lees in tanks and barrels.
