Tasting Note
Concentrated black-fruit core (blackberry, black cherry, cassis) with violet florals, truffle, dark chocolate and cocoa; dense, silky tannins and a long, ganache-like finish.

Food Pairing
Western: roast ribeye, rack of lamb, beef tenderloin, duck à l'orange. Asian: Peking duck, char siu, Korean BBQ beef (bulgogi), mushroom hot pot, rich Chinese braised beef.

Production Method
Hand-harvested; fermented in temperature-controlled concrete vats with extended maceration; full malolactic fermentation and ~18 months in new French oak (majority new).

Château L'Evangile (22 ha) on the Pomerol plateau; owned by Domaines Barons de Rothschild (Lafite) since 1990; neighbouring Petrus and Cheval Blanc.
