Tasting Note
Pale salmon-pink with aromas of rose petal, redcurrant, dried cherry, pink grapefruit and spice. Creamy mousse, honeyed citrus and brioche notes, with vinous depth and a long saline finish.

Western: foie gras, duck breast, lamb, venison, mushroom risotto, smoked salmon, anchovies; Asian: sushi/sashimi (tuna), tempura, spicy Thai, Sichuan-style dishes, Korean BBQ.

Production Method
Traditional method (méthode champenoise). Blend of 32 wines from six years (base 2016) with ~38% reserve wines and 10% traditionally macerated Pinot Noir; aged ~6–7 years on lees; disgorged winter 2022–2023.
