Tasting Note
Spicy, floral nose with red cherry, wild herbs, fennel and olive. Medium–full body, bright acidity, chalky yet creamy tannins, mineral/iodine notes and a long, fresh finish.
Food Pairing
Western: grilled beef, roast lamb, pork chop, mushroom risotto, aged cheeses. Asian: Korean BBQ (bulgogi), char siu/roast pork, hoisin duck, Sichuan-style braised beef, teriyaki dishes.
Production Method
Hand-harvested; small stainless-steel fermentations with occasional foot treading at 24–28°C; aged ~18 months in 225L French oak. Certified organic, biodynamic and vegan.
Vineyard Info
Viña Koyle (Undurraga family project) near Los Lingues. High-density, biodynamic vineyards planted on basaltic soils; small, cuartel-specific bottlings first produced in 2015.
