Tasting Note
Herb-tinged red and black berries with smoky, peppery spice, dried herbs and a mineral, basaltic core. Silky, fine tannins, juicy mid-palate and a long, spicy finish.
Food Pairing
Western: grilled steak, roast lamb, aged Manchego or Pecorino, charcuterie. Asian: Korean BBQ (bulgogi), char siu or Cantonese roast pork, spicy Sichuan pork dishes, teriyaki beef skewers.
Production Method
Organic/biodynamic farming. 2019 used partial whole-cluster semi-carbonic fermentation; lots fermented in small oak and stainless tanks. Varieties aged separately (barrel, foudre, concrete eggs) ~12 months, then blended and rested ~6 months in foudre before bottling.
