Tasting Note
Lush, honeyed apricot, Seville marmalade, orange blossom, saffron and jasmine with candied citrus and delicate spice. Silky, concentrated and sweet yet lifted by crisp acidity and a long pithy finish.
Food Pairing
Western: foie gras, tarte Tatin, crème brûlée, aged blue cheese (Stilton). Asian: mango sticky rice, coconut milk desserts, pandan/kaya desserts, mildly spiced Chinese pastries. Also excellent alone as an after-dinner sipper.
Production Method
Hand-harvested raisined Muscat; short skin contact, fermentation arrested to retain ~172 g/L residual sugar; aged ~18 months in 500L French & Hungarian oak (50% new) then ~18 months in large foudres.
