Tasting Note
Aromatic jasmine, white-peach and apricot lift off citrus and green-fruit notes. Medium-bodied, crisp acidity with stone-fruit richness, subtle mineral edge and a refreshing, fruity finish.
Food Pairing
Grilled or pan-fried white fish, seafood, fresh goat or feta cheese, roast chicken, lemon risotto; Asian: sushi/sashimi, Vietnamese spring rolls, Thai green papaya salad, mildly spicy Chinese stir-fries.
Production Method
Hand-harvested Roditis and Malagousia. Cold soak, static debourbage, separate stainless-steel fermentations, blended and aged 3–5 months on lees with bâtonnage. Bottled under screwcap.
