Tasting Note
Crisp citrus, green apple and white peach with pear and flinty minerality. Medium-plus texture from Chardonnay, subtle spice and warm-dough oak, saline persistence and long, precise finish.

Western: grilled or smoked fish, roasted chicken, creamy pasta, mushroom risotto, Brie or Gruyère. Asian: sushi and sashimi, Thai coconut or green curry, Chinese steamed fish, Vietnamese fresh spring rolls.

Production Method
Hand-harvested blend; cool stainless-steel fermentation with portions aged in large old oak and used barriques. Minimal new oak, bottled dry.
