Tasting Note
Bright, saline Riesling with pickled lemon, grapefruit, apricot and wet-stone minerality. Slightly off-dry (feinherb) with ripe tropical hints, electric acidity and a long, racy mineral finish.

Oysters, sashimi/sushi, grilled white fish, roast pork or pork belly, duck (five-spice), spicy Thai or Szechuan dishes, dim sum, goat cheeses, fresh salads.

Production Method
Hand-harvested fruit from top parcels; spontaneous (indigenous) yeast fermentation, stopped/finished with ~12 g/L residual sugar; aged briefly in stainless or large fuder with minimal intervention.
