Tasting Note
Intensely botrytised sweetness: apricot, baked apple, bitter orange marmalade, honeyed stone fruit and mango over a syrupy, viscous core. Bracing citrus acidity and saline mineral spine keep it lively with a very long, bittersweet finish.
Food Pairing
Western: foie gras, blue cheese (Roquefort/Gorgonzola), fruit tarts, crème brûlée. Asian: mango sticky rice, spiced duck or Peking duck, Thai coconut curry, rich Chinese pastries with lotus or red bean.
Production Method
Hand-harvested, individually sorted botrytised grapes (picked ~300° Oechsle). Fermented slowly in small glass demijohns, finished in early winter; tiny Goldkapsel lot bottled in 375ml format.
