Tasting Note
Perfumed citrus (pink grapefruit, blood orange), white peach, citrus blossom, flint and cool menthol. Dry, concentrated palate with piercing lemon acidity, saline minerality, racy grip and a very long, poised finish.

Food Pairing
Western: lobster, scallops, grilled white fish, roast chicken, pork tenderloin, creamy risotto. Asian: sushi/sashimi, tempura, Vietnamese spring rolls, lightly spicy Thai or Chinese dishes, shellfish with citrus soy.

Production Method
Hand-harvested, low-yield fruit from VDP Grosse Lage Hubacker. Spontaneous fermentation with indigenous yeasts in stainless steel and large neutral oak casks; aged several months and bottled as a dry Grosses Gewächs (minimal sulfur).
