Tasting Note
Powerful, chalky minerality with citrus (grapefruit, lemon), white flowers, green herbs and a saline, stony core. Full-bodied yet lithe, razor acidity and a very long, precise finish.

Food Pairing
Western: oysters, scallops, grilled white fish, roast chicken, asparagus, goat cheese. Asian: sushi/sashimi, steamed fish with ginger & scallion, Thai green curry (milder), Sichuan-style steamed fish, Vietnamese seafood dishes.

Production Method
Hand-harvested single-vineyard Riesling. Selected, low-intervention vinification with spontaneous (indigenous) fermentation; fermented in stainless steel/large neutral vessels and aged on fine lees before bottling as a trocken GG.
