Tasting Note

Deep ruby; concentrated blackberries, plum, dark chocolate, black olive and dried herbs with violets and savory/charcuterie notes. Dense, saline core, fine graphite tannins and a long, savory finish.

Production Method

Hand-harvested, crushed and destemmed, open-top fermentation (10–13 days), basket-pressed and matured 18–23 months in French and American oak puncheons (≈33–40% new).
