Tasting Note
Bright dark-berry fruits (plum, blackberry, mulberry, cassis) with spice, cedar and vanilla oak; full, supple palate, defined tannins and a long, lingering finish.

Food Pairing
Grilled ribeye, slow-roasted lamb shoulder, porcini risotto with parmesan (Western). Pair with beef rendang, Korean BBQ short ribs, char siu or hoisin-glazed duck (Asian).

Production Method
Small-batch fermentations; matured ~16 months in French oak hogsheads (40% new, 60% seasoned).

Historic Katnook Estate farms terra rossa vineyards in Coonawarra; modern plantings from 1971 with origins back to 1896. Odyssey is the estate’s flagship Cabernet; brand now owned by Accolade.
