Tasting Note
Bright crimson Merlot with plum, blackcurrant, raspberry, violet and black-berry leaf. Spicy oak notes of clove and cinnamon, with a graphite mineral lift, plush texture, fine tannins and lively acidity.

Food Pairing
Roasted lamb, grilled beef, mushroom risotto, roast chicken; Asian: char siu pork, Peking duck, teriyaki beef, mildly spiced Korean BBQ or beef bulgogi, Cantonese-style roasted meats.

Production Method
Fermented as a varietal Merlot; selected parcels matured 14–16 months in new and used French and American oak hogsheads/barriques. Bottled under screwcap.

Katnook Estate is a historic Coonawarra producer (late 19th‑century origins) farming terra rossa vineyards. Now part of larger groups since 2020, it produces estate and Founders Block wines focused on regional red varieties.
