Tasting Note
Peach, nectarine and citrus with preserved lemon, cashew and subtle brioche/toast. Creamy mid-palate from lees contact, tight acidity and a fresh, lingering finish with delicate vanillin oak spice.

Food Pairing
Western: roast chicken, creamy pasta, smoked salmon pasta, grilled halloumi, roast pork. Asian: chicken saag, mild butter chicken or korma, miso-glazed fish, sushi/ sashimi with richer fish.

Production Method
Fermented partially with wild yeast, lees contact with regular bâtonnage, matured ~5 months in French oak (small percentage new) to add complexity.
