Tasting Note
Peach and nectarine with bright citrus (grapefruit, preserved lemon), subtle cashew/almond nuttiness and wet-limestone minerality. Light creamy oak and lees texture, crisp acidity and a long, linear finish.
Food Pairing
Western: roast chicken, grilled haloumi, creamy mushroom pasta, crab linguine. Asian: miso-glazed salmon, tempura prawns, mild Thai coconut curry, chicken katsu.
Production Method
Portions fermented in oak (French), matured on lees for several months with gentle oak integration; stainless steel used for freshness and to retain linear acidity.
