Tasting Note
Aromas of ripe Nanko plum, honey and citrus peel. Silky, round palate with stone-fruit, almond and caramel notes; bright acidity balances sweetness for a smooth, fruity finish.
Food Pairing
Western: panna cotta, crème brûlée, blue or aged cheeses, roasted pork, glazed ham. Asian: yakitori, teriyaki chicken, sashimi, spicy Korean chicken, pickled vegetables (tsukemono).
Production Method
Traditional umeshu: ripe ume plums macerated with sugar in a sake (ginjo) or neutral-spririt base, rested months to extract fruit, then filtered and bottled.
Vineyard Info
Kankoubai (寒紅梅酒造), founded 1854 in Tsu, Mie, began as a plum-wine specialist and has developed award-winning sake in recent years.
