Tasting Note
Golden-yellow with aromas of pineapple, white peach and citrus; oak-driven coconut, vanilla and toffee. Rich, creamy palate with ripe tropical fruit, lively acidity and a long, fresh finish.

Food Pairing
Western: roast chicken with cream sauce, grilled salmon, lobster thermidor, creamy pasta, mushroom risotto. Asian: miso-glazed black cod, rich sushi nigiri, Thai green curry, chicken satay with peanut sauce.

Production Method
Hand-harvested; pneumatic press; 65% fermented in concrete, 35% in new French oak; weekly lees bâtonnage; alcoholic fermentation ~21 days at ~16°C; 12 months in oak, brief bottle aging.

Kaiken (founded by Aurelio Montes, est. ~2001/2002) sources high-altitude vineyards in Mendoza; Ultra is the winery's premium line combining fruit from Gualtallary (Uco Valley) and Vistalba (Luján de Cuyo).
