Tasting Note
Bright red-purple colour. Intense aromas of fresh strawberries, blackberry and violet with subtle resinous and herbal notes. Creamy texture, soft tannins, firm body and a long, fruity finish with a slight herbal lift.

Food Pairing
Grilled steak, asado, lamb chops, roasted pork, aged cheddar/ manchego; Korean BBQ, char siu, spicy Sichuan beef, mushroom stir-fries, empanadas.

Production Method
Hand-harvested fruit fermented in concrete tanks with selected/native yeasts. Short maceration, aged ~12 months in concrete, bottled and rested ~6 months before release.
