Tasting Note
Dense black-fruit core of blackberry, mulberry and black cherry with vanilla, cedar, liquorice, tobacco and dark chocolate notes; full-bodied, plush palate with velvety tannins and a long, spicy finish.

Grilled or roasted red meats (ribeye, lamb chops, braised beef), BBQ brisket, steak frites; Asian pairings: char siu, Korean BBQ short ribs, spicy Sichuan beef, teriyaki or hoisin-glazed duck.

Production Method
Hand-harvested old-vine Shiraz and Cabernet, component ferments, matured ~18–19 months in French oak (approx. 60% new) with malo in barrel, bottled after blending.
