Tasting Note
Inky crimson with black and blue fruits, cassis, spice and a touch of liquorice. Full-bodied, supple with ripe round tannins and an elegant, fruit-driven finish.

Food Pairing
Grilled/roasted lamb, ribeye steak, BBQ brisket, aged cheddar; Asian: Korean BBQ (bulgogi), char siu, spicy Sichuan beef, Cantonese roasted meats.

Production Method
Hand-harvested estate fruit; destemmed, 7–10 day ferment with regular pump-overs; malolactic fermentation followed by ~15 months maturation in older French (used) oak barrels.
