Tasting Note
Pale straw; citrus and white stone fruit with melon, peach and subtle cashew/vanillin spice. Elegant, mouth-filling with a citrusy acid backbone and persistent finish.

Food Pairing
Western: butter-roasted chicken, grilled salmon, lobster with beurre blanc, creamy pasta, soft cheeses. Asian: miso-glazed cod, tempura, sushi (fatty tuna), mildly spiced Thai or Cantonese creamy dishes.

Production Method
Night machine-harvest, light whole-bunch pressing, cold settle, ~10-day ferment, ~8 weeks on lees with ~5% lees retained for texture, then bottled July 2024.
