Tasting Note

Blackberry, plum, kirsch, vanilla and lavender aromas with spice and sandalwood oak; full-bodied palate of blackcurrant and dark plum, chalky ripe tannins and a long savory finish.

Western: roast lamb, grilled steak, roast beef, portobello mushroom dishes. Asian: beef bulgogi, char siu, Cantonese roast meats, Sichuan pepper beef, umami-rich mushroom stir-fries.


Production Method

Hand-harvested estate fruit; fermented on skins 9 days (19–28°C), pressed to stainless, then completed malolactic in new and 1‑year French oak barriques for ~20 months. Topped monthly.
