Tasting Note
Electric pink; aromas of strawberry, raspberry and red cherry with citrus zest. Crisp, saline minerality, light-bodied, dry, bright acidity and a clean, refreshing finish.

Food Pairing
Western: seafood (shrimp, ceviche), salads, grilled chicken, pork, charcuterie, mild cheeses. Asian: sushi/sashimi, Vietnamese spring rolls, Thai green papaya salad, pork lo mein, lightly spicy Korean dishes.

Production Method
Short maceration for colour, cool stainless-steel fermentation, aged on fine lees. Certified organic/biodynamic; minimal intervention in the cellar.
