Tasting Note
Bright, bone-dry Riesling: lemon-citrus, green apple and pear with white-flower notes, pronounced slate/mineral and a touch of petrol. Zesty acidity, medium body and a long, saline finish.

Western: grilled scallops, lemon-roasted chicken in cream, goat cheese, Comté, fish tartare. Asian: sushi and sashimi, sashimi-style scallops, shellfish, steamed fish, mildly spicy Thai or Vietnamese dishes.
Production Method
Hand-harvested; gentle whole-bunch pressing; spontaneous fermentation with indigenous yeasts; aged on fine lees in large oak foudres and/or stainless steel; minimal filtration. Biodynamic viticulture.

Domaine Josmeyer, family estate near Colmar since 1854. Managed biodynamically; Le Dragon comes from old vines on the Drachenloch/Letzenberg limestone slopes above Turckheim.
