Tasting Note
Intense floral nose of rose and lychee with mango and exotic spices. Full-bodied and vibrant, peppery spice and saline minerality underpin ripe stone-fruit; long, spicy finish.

Food Pairing
Western: roast pork, duck à l’orange, smoked salmon, rich terrines, Munster and aged cheeses. Asian: Thai green curry, Indian curry (tandoori/tikka), Vietnamese salads, spicy Sichuan dishes.

Production Method
Hand-harvested from old vines; spontaneous native-yeast fermentation; élevage on fine lees in stainless steel and old oak foudres; certified organic/biodynamic; lightly filtered before bottling.
