Tasting Note

Morello and preserved cherry, underbrush, fine leather and nutmeg; with age shows truffle and game. Silky texture, balanced acidity and polished tannins, long persistent finish.

Western: roast duck, beef bourguignon, venison, mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, char siu (Cantonese roast pork), miso-glazed black cod or teriyaki salmon, soy & mushroom stir-fries. (Pairs well with truffle and game notes).


Production Method

Hand-harvested; 20–50% whole-cluster depending on vintage; 2–3 week ferment/maceration in small open vats with indigenous yeasts; pressed, aged 16–20 months in French oak (≈30% new).
