Tasting Note
Perfumed and exotic: black truffle, jasmine, five‑spice, black pepper and clove with dried blueberry, Mission fig, tobacco, mint and baking chocolate. Velvety, concentrated black fruit, blackberries and smoked plum; graphite and spice lead to a long, savory finish.
Food Pairing
Western: grilled lamb, beef short ribs, roasted venison, mushroom risotto, aged cheeses (cheddar, Manchego). Asian: Korean BBQ (galbi), Sichuan beef, char siu, teriyaki beef, shiitake mushroom stir‑fries.
Production Method
Small‑lot fermentations and careful extraction; blended from estate lots and matured ~20 months in French oak barrels (≈35% new) before bottling.
