Deep purple; concentrated black plum, blackberry and dark cherry with tar, liquorice, clove and anise. Cedary oak and toasted spice frame plush fruit, sinewy gravelly tannins and savory earth. Full-bodied with a brooding, long finish.
Food Pairing
Grilled or roasted lamb, beef ribeye, short ribs, aged cheddar; Asian: Korean BBQ (bulgogi), Sichuan pepper beef, char siu pork, hoisin-glazed duck.
Production Method
Crafted from select low-yield Clare Valley Shiraz (some fruit declassified from The Armagh). Fermented with traditional methods and matured ~12–18 months in French oak (portion new). Bottled under screwcap.
