Tasting Note

Intense lime, kaffir lime and citrus blossom with wet-slate chalky minerality. Electric palate of brown lime cordial, green apple and lemon; very high acidity and a long, dry, crisp finish.

Oysters and ceviche; sashimi/sushi and sashimi-grade fish; lemongrass Thai prawns with jasmine rice; grilled snapper with zesty lime; goat cheese or soft cheeses; lemon-herb roast chicken; Asian salads with sesame and chilli.

Hand-picked at high altitude; gentle pressing and rapid fermentation (stainless steel) to preserve fresh citrus and natural acidity.
