Pronounced lime, lemon zest, quince, honey and candied citrus with petrol/kerosene, beeswax and toasty lees notes; bright, tense acidity, waxy mid‑palate and a very long, dry finish.

Western: oysters, ceviche, grilled white fish, roast pork with apple, goat cheese. Asian: sashimi/sushi, Thai green curry, Vietnamese lemongrass pork, Chinese steamed fish with ginger and spring onion.
