Tasting Note
Crisp, electric white with lime, lemon flesh, green apple, pear, pink grapefruit and wet-stone minerality. Chalky, saline finish with lifted herbaceous notes and bright, piercing acidity.
Food Pairing
Western: grilled prawns, steamed barramundi, oysters, lemon roast chicken, Greek salad and feta. Asian: sashimi/sushi, Thai fish cakes, Vietnamese seafood noodle soups, light spicy stir-fries.
Production Method
Majority cool-fermented in stainless steel; ~10% fermented/aged in oak on lees for texture, then blended. Screwcap closure; minimal malo, retaining high natural acidity.
