Tasting Note
Pale straw with lime, green pear, grapefruit and white florals, bright citrus acidity, steely/mineral core and talc-like texture; saline, chalky finish.
Food Pairing
Fresh seafood (oysters, sashimi, grilled fish), lemon-herb chicken, Greek mezze, salads, grilled octopus or calamari, tempura, light Thai dishes (lemongrass/citrus), roasted vegetables.
Production Method
Hand-harvested Assyrtiko fermented mainly in stainless steel to preserve acidity; small portion (reserve) on lees and limited oak influence for texture before blending and bottling.
