Tasting Note
Ripe black-plum and brambly red/black fruit with earthy forest-floor, black tea and spice notes. Medium–full-bodied, layered and concentrated, with fresh acidity, powdery but firm tannins and a long, lingering finish.

Roast lamb, duck breast, pork tenderloin, mushroom risotto; Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed eggplant, grilled shiitake with soy-ginger.

Production Method
Hand-harvested Pinot Noir; destemmed with short cold soak, spontaneous/native yeast fermentation with some whole-cluster inclusion (varies by parcel), maceration ~2–3 weeks, aged 12–14 months in oak (c.20–25% new).
