Tasting Note
Ripe pear and yellow orchard fruit with acacia florals, chalky minerality and subtle vanilla/pastry oak. Silky, medium–full body with fresh acidity and a long, mineral finish.

Food Pairing
Western: roast chicken, lobster or scallops with beurre blanc, grilled salmon, mushroom risotto. Asian: sushi/sashimi, tempura, steamed white fish with ginger & soy, mild Thai green curry.

Production Method
Whole-cluster pressing with overnight settling; fermentation and élevage in oak barrels (≈15% new), native yeasts and lees ageing.
