Tasting Note
Fresh red cherries and raspberries with a floral lift, subtle allspice and earthy notes; medium-bodied, silky polished tannins, bright acidity and a long refined finish.

Western: roast chicken, duck breast, mushroom risotto, pork tenderloin, charcuterie and soft cheeses. Asian: Peking duck, char siu, miso-glazed salmon or aubergine, shiitake mushroom stir-fries, teriyaki dishes.
Production Method
Hand-harvested and sorted; grapes destemmed, 5-day cold pre-fermentation maceration, spontaneous (native) fermentation, ~3-week cuvaison; aged 12 months in oak (≈20% new); no fining.

Family domaine founded 1850 in Santenay (≈15 ha); converted to organic viticulture; William Waterkeyn leads winemaking; ownership transferred to Dr Jean‑François Le Bigot in 2020.
