Tasting Note
Deep ruby with aromas of blackberry, blackcurrant and spice. Powerful yet elegant palate of ripe dark fruit, fine-grained tannins, balanced acidity and subtle oak; savory, persistent finish.

Food Pairing
Western: roast chicken, veal, mushroom risotto, roast lamb, charcuterie and soft cheeses. Asian: Peking/roast duck, char siu pork, miso-glazed salmon, pork-belly buns, soy-ginger beef.

Production Method
Hand-harvested; fully destemmed; 5-day cold pre-fermentation maceration; spontaneous fermentation (~3 weeks); 14 months in French oak (25% new); bottled unfined/unfiltered; certified organic.
