Tasting Note
Ripe apple, quince and pear with baking spice, toasted hazelnut and creamy butter; concentrated, mineral-driven palate with bright acidity and a long, slightly honeyed finish.
Food Pairing
Western: roast chicken, lobster with beurre monté, mushroom risotto, soft cheeses (Brie, Comté). Asian: miso‑glazed cod, teriyaki or soy‑butter grilled fish, tempura, mild Thai coconut curries and creamy Japanese dishes.
Production Method
Direct pressing of whole grapes, settling in tank, barrel fermentation with natural yeasts; aged 12 months on lees in oak (≈25% new), then 4–6 months in stainless steel.
