Tasting Note

White peach, citrus and white flowers with flinty mineral and light pastry/oak notes. Medium-plus body, creamy texture, bright acidity and a saline, slightly peachy finish.


Food Pairing

Western: roast chicken, buttered lobster, grilled salmon, creamy poultry dishes, soft cheeses (Comté, Brie). Asian: miso-glazed black cod, yakitori, sushi/sashimi (fatty fish), mild Thai green curry, stir-fried mushrooms with soy.


Production Method

Hand-harvested from high-density plantings (≈14,000 vines/ha); gentle pressing, fermentation and élevage in large oak (≈300L) with lees ageing and occasional bâtonnage; limited sulfur; Diam closure.
