Tasting Note
Mineral- and smoke-tinged nose of black and blue fruits, violets and licorice. Palate shows juicy black and red fruit, peppery herbs, smoked-meat and fine chewy tannins with a long, spicy finish.
Food Pairing
Roast lamb, beef ragu, venison, duck confit; Asian pairings: Korean BBQ (bulgogi), char siu, spicy Sichuan beef, miso ramen with pork.
Production Method
Hand-harvested; ~30% whole-cluster fermentation; fermented in open vats and aged ~20–22 months in oak (up to 20% new demi-muids/pièces).
