Tasting Note

Crisp citrus and green apple with pronounced flinty/iodine minerality, saline chalky finish, white flowers and subtle leesy texture; light nutmeg/spice and tight acidity.

Western: oysters, scallops, grilled or roasted white fish, roast chicken, chèvre, creamy seafood risotto. Asian: sashimi, sushi, tempura, steamed fish with ginger/soy, seafood hot pot (nabe), cold sesame noodles.


Production Method

Old‑vine Chardonnay from massal selection; sustainably/organically farmed, hand-harvested; natural (spontaneous) fermentation, full malolactic; aged mainly in stainless steel with light fining and filtration.


Vineyard Info

Family domaine since 1792; bottled under Jean Collet since 1954. Vieilles Vignes planted in 1932; estate farms ~40 ha across Chablis appellations and has adopted organic/sustainable viticulture.
