Tasting Note
Pale lemon with green highlights. Lemon zest, orchard fruits and saline wet-stone minerality dominate, with bright citrus acidity, fine tension and an elegant, focused finish. Medium-bodied and precise.

Production Method
Organically farmed parcel. Pneumatic pressing, cold settling, spontaneous alcoholic fermentation and ageing in temperature-controlled stainless steel (≈14 months). No fining or filtration.

Domaine Jean Collet & Fils (founded 1952) farms ~40 ha in Chablis. Les Truffières is a 1.26 ha Portlandian-site in Villy, planted early 1990s and farmed organically (certified from 2018, FR-BIO-10).
